Which cheese should you choose?
It's the star of the table! So you have to choose it carefully. Some will tell you that raclette cheese must be Swiss, period. And to follow tradition to the letter, the essential choice is “Raclette du Valais.” It is this cheese, melted and scraped, that gave its name to “raclette.” It is a AOP (Appellation d'Origine Protégée) product: it is made in the Valais region of Switzerland according to ancestral know-how.
